So i have 2 12's hooked up to an 1800 watt amp, and my ground wire is like an 18 guage or something, I was wondering is that is way to small, can that mess something up?

Yes. Your ground wire and power wire should be the sme size to prevent heat build up in your wires which can potentially be a fire hazard. What size fuse does the amp have on it? what is the amperage draw of the amp at 12 volt? this info will determine the size of wire you need. If you don't know this, what brand is the amp and the model number?

and i was also wondering - how my settings should be set - the levels on my amp, to get best quality.

I would make sure that the power and ground wires are at least 10 gauge or larger (smaller the gauge number the larger the wire) Make sure that the power is ran directly to the battery with a fuse at the battery. Use at least a 60amp fuse. As far as gain settings that is a little more complicated. Just turn them up till it sounds good to you without the amp clipping. There should be a clip light on the amp. You can set this at the loudest point that you would listen to your system. Thats the easiest way for me to tell you how to do it without getting into matching the output voltage of your headunit.
